Throughout May Iowa Food & Family‘s Join my Journey spread the word about pork. I shared a recipe for Country Fired Pork Chops that was really good.
But wanted to share another pork recipe here. Jim has a sweet tooth and if he could add fruit or sugar to everything I think he would. He had been wanting to make some Pineapple Pork Kabobs for a while so we seasoned the meat with my “Angel Rub” and added it to the skewer with pineapple and red and yellow peppers. The bright colors made it look so good!
We like eating at Famous Dave’s occasionally and they serve Pineapple Planks, so Jim added some of those to the grill as well. Not sure how much to make we did about 5 skewers each… I think we only ate 2-3 a piece. I had always avoided the cooked pineapple and was surprised to find that it was actually pretty good.
We served it with potatoes and an Olive Garden Salad that I will sharing the recipe for next week. It was really good and more food than we could finish.
